BLEFARI MÉTHOD TRADITIONNELLE

A classic bottle fermented style with upfront citrus and strawberries combined with a hint of cream biscuit and yeasty notes.

This wine is made in the traditional method from a blend of 60% Pinot Noir and 40% Chardonnay handpicked from our Carey Gully Vineyard.

The best juice was set aside and fermentation occurred in vat. Once completed we hand bottled with yeast and sugar to create the elegant bubbles. We then let the wine age for a minimum 18 months on lees known as tirage.

This wine is bottle fermented and has been progressively hand disgorged on demand.

BLEFARI RIESLING

The Blefari Riesling is a pure expression of the cool climate Adelaide Hills.

The Holland Creek block is located in **** and is moderated by the Mount Lofty Ranges. Hand harvested on March ** 2021, the Blefari Holland Creek Block Riesling is fermented at cool temperatures to retain delicate natural acidity and minimal intervention to ensure purity of fruit expression.

The Blefari Holland Creek Block Riesling is fresh, vibrant and with its enticing aromas of citrus blossom, lime zest, and freshly cut apples with jasmine and a hint of lemon myrtle it is the perfect accompaniment to your next gathering.

BLEFARI PINOT GRIGIO

This hand picked wine was made with freshness of fruit in mind – Superb varietal definition, herbal flinty notes, amid the fruit salad bouquet.

BLEFARI CHARDONNAY

This variety, produced since 2000, with characteristic citrus, stone fruit and green apple flavours, is tightly structured and has a lingering palate.

Elegant and refreshing in their youth. After a few years in the bottle, the wine matures gracefully and exhibits wonderful mellow complexities and honey-like characters.

This wine matured in oak barrel for 2 months to add complexity. The ultimate white wine for food.

BLEFARI PINOT NOIR

The Blefari Block 9 Pinot Noir is a fine expression of the Carey Vineyards in the cool climate Piccadilly Valley.

This is an elegant wine, intensely complex with Burgundian characteristics of cherry, strawberry, spices and gaminess, with wonderful length and intensity of colour.

The palate is soft and vibrant, with soft and silky tannins.

BLEFARI MERLOT

In just a few short decades, the Blefari family have etched out a formidable reputation for producing high quality wine from their Carey Gully vineyard in the Piccadilly Valley.

This textbook Merlot captures the varietal characters of berries, fruitcake and velvety tannins. The judicious use of French and American oak adds mocha and vanilla softens and rounds the palate.

While merlot is not a traditional variety of the Piccadilly Valley, this one is too good to pass up!
